I’m still pretty new to this game (day 34).
I understand that the clearence level in PVE determines the level of my enemies.
But what about PVP? This Reality Season, how should I know which Level I should choose?

It has no effect on gameplay other than the rewards you receive from placement and progression. Your enemies will still be the same regardless of which you choose.
pvp scl does not determine your opponents, it’s your roster that does.

So I can go at a higher level now 
Depends, if you place high it’s sometimes worth staying at a lower clearance level to maintain those high finishes for the extra rewards. If you can still place as high in the higher SCL you can move on up.
Need more information to give more specific help. Most of us don’t know about the lower clearance levels as we never had to play them
