Due to a gorgeously placed 3 red activates ready for a match (seriously though, activate FIVE?) the AI took all my 3 creatures, meaning he attacked me with 6 creatures total. Couldn’t even see all of them on screen. I thought there was a limit of 4 creatures (3 & 1 stolen)?

Yep, Captivating Crew is pretty crazy.
I’ve never managed 6 before, been able to get to 5 with some shenanigans (Willbreaker + Turn against I think). I’ve heard 6 was possible before but only under circumstances that I never figured out, too hard to get Greg to play 3 creatures usually anyway.
Actually … with captivating crew its quite easy to steal the whole board of the oponent … Even without a lucky match … A specific creature just comes to my mind …
Yep. I used to do it all the time with Willbreaker.
Step 1: cast J2’s ult
Step 2: steal everything
Step 3: day’s undoing
Step 4: cackle maniacally (optional)
I’m pretty sure step 4 is required. 
For added shenanigans, try mooning or frogging a stolen critter. Since the token was created on “your” side, you get to keep it! Yay!
He also had Throne of the God Pharaoh in play…so…ouch
I liked to reclaim the stolen critter personally. And yes this was back when I first got Throne of the God Pharaoh.
